- Stir in honey, melted coconut oil, and vanilla extract.
- Add oats, cinnamon, baking powder, and salt. Mix until fully combined.
- Fold in nuts or chocolate chips if using.
- Spread mixture evenly into the prepared pan.
- Bake for 20–25 minutes, until set and lightly golden.
- Cool completely before slicing into bars.
Notes
For extra protein, add a scoop of vanilla protein powder or stir in nut butter. These bars store well in the refrigerator for up to 5 days and freeze beautifully for meal prep.
