- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp black pepper
- Salt to taste
- Fresh parsley, chopped (optional garnish)

- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until caramelized, about 8–10 minutes.
- In a large bowl, combine chicken, uncooked orzo, French onion soup, chicken broth, thyme, salt, and pepper.
- Add caramelized onions and garlic, then stir to combine.
- Transfer mixture to a greased 9×13-inch baking dish. Sprinkle Gruyère and Parmesan cheese evenly on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
Optional: Add mushrooms or spinach for extra vegetables. For a crispier top, broil for 2–3 minutes at the end.
