  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp fresh thyme (optional)
  • Fresh parsley for garnish (optional)

  1. Season steaks: Pat steaks dry and season generously with salt and pepper.
  2. Sear steaks: Heat olive oil in a heavy skillet over medium-high heat. Cook steaks 3–4 minutes per side for medium-rare, or to desired doneness. Remove and let rest.
  3. Prepare sauce: Reduce heat to medium. Add butter and garlic to the pan and sauté 1 minute. Carefully pour in whiskey and simmer 2–3 minutes to reduce slightly.
  4. Add cream: Stir in heavy cream, Dijon mustard, and thyme. Simmer 3–5 minutes until sauce thickens.
  5. Serve: Return steaks to the pan briefly to coat with sauce, or spoon sauce over plated steaks. Garnish with parsley if desired.

Notes

Allow steaks to rest at least 5 minutes before serving. Use caution when adding whiskey to a hot pan. For a thicker sauce, simmer slightly longer. Pairs beautifully with mashed potatoes or roasted vegetables.
