- Prepare sauce: Reduce heat to medium. Add butter and garlic to the pan and sauté 1 minute. Carefully pour in whiskey and simmer 2–3 minutes to reduce slightly.
- Add cream: Stir in heavy cream, Dijon mustard, and thyme. Simmer 3–5 minutes until sauce thickens.
- Serve: Return steaks to the pan briefly to coat with sauce, or spoon sauce over plated steaks. Garnish with parsley if desired.
Notes
Allow steaks to rest at least 5 minutes before serving. Use caution when adding whiskey to a hot pan. For a thicker sauce, simmer slightly longer. Pairs beautifully with mashed potatoes or roasted vegetables.
