  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 1/2 lbs baby potatoes, halved
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or melted butter
  • 1/2 cup chicken broth
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. In a bowl, toss baby potatoes with garlic, paprika, thyme, salt, pepper, and olive oil.
  3. Place potatoes around and on top of the chicken.
  4. Pour chicken broth over everything.
  5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken and potatoes are tender.
  6. Garnish with fresh parsley and serve hot.

Notes

Optional: Add carrots or green beans during the last 2 hours of cooking for extra vegetables. For crispy skin, broil chicken for 3–5 minutes before serving.
