Crockpot Chicken and Potatoes is a simple, comforting one-pot meal. Tender chicken cooks with baby potatoes, garlic, and seasonings in the slow cooker for a hearty, hands-off dinner.

- 2 lbs boneless, skinless chicken thighs or breasts
- 1 1/2 lbs baby potatoes, halved
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil or melted butter
- 1/2 cup chicken broth
- Fresh parsley, chopped (optional garnish)

- Place chicken in the bottom of the slow cooker.
- In a bowl, toss baby potatoes with garlic, paprika, thyme, salt, pepper, and olive oil.
- Place potatoes around and on top of the chicken.
- Pour chicken broth over everything.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken and potatoes are tender.
- Garnish with fresh parsley and serve hot.
Notes
Optional: Add carrots or green beans during the last 2 hours of cooking for extra vegetables. For crispy skin, broil chicken for 3–5 minutes before serving.
