- In a large mixing bowl, beat egg whites with cream of tartar and salt until soft peaks form.
- Gradually add remaining 1 cup sugar while continuing to beat until stiff peaks form.
- Gently fold in vanilla extract and almond extract (if using).
- Fold in the sifted flour and sugar mixture in small portions until just combined.
- Carefully spoon the batter into prepared cupcake liners, filling about 2/3 full.
- Bake for 18–20 minutes, or until cupcakes are golden and spring back when lightly touched.
- Remove from oven and cool completely on a wire rack.
Notes
For extra flavor, top with fresh berries or a light dusting of powdered sugar. Be careful not to overmix the batter to maintain the airy texture.
