Description

Green Borscht is a bright, tangy, and comforting Eastern European soup made with fresh greens like sorrel or spinach, tender potatoes, and a flavorful broth. Often finished with boiled eggs and sour cream, it’s both hearty and refreshing.

  • 6 cups chicken or vegetable broth
  • 2 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups sorrel or spinach, chopped
  • 2 tbsp butter or oil
  • 1 tbsp lemon juice (if not using sorrel)
  • Salt and black pepper, to taste
  • 2 hard-boiled eggs, sliced
  • 1/4 cup sour cream, for serving
  • Fresh dill or parsley, chopped (optional)

  1. Sauté aromatics: In a pot, melt butter over medium heat. Add onion and garlic and cook 2–3 minutes until softened.
  2. Add broth & potatoes: Pour in broth and add diced potatoes. Bring to a boil, then reduce heat and simmer 10–15 minutes until potatoes are tender.
  3. Add greens: Stir in chopped sorrel or spinach and cook 3–5 minutes until wilted.
  4. Adjust flavor: Add lemon juice if needed for tanginess. Season with salt and pepper to taste.
  5. Serve: Ladle soup into bowls. Top with sliced hard-boiled eggs, a dollop of sour cream, and fresh herbs.

Notes

Sorrel gives traditional borscht its signature tangy flavor, but spinach with lemon juice is a great substitute. This soup can be served warm or chilled.
