- 6 cups chicken or vegetable broth
- 2 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups sorrel or spinach, chopped

- Salt and black pepper, to taste
- 2 hard-boiled eggs, sliced
- 1/4 cup sour cream, for serving
- Fresh dill or parsley, chopped (optional)

- Sauté aromatics: In a pot, melt butter over medium heat. Add onion and garlic and cook 2–3 minutes until softened.
- Add broth & potatoes: Pour in broth and add diced potatoes. Bring to a boil, then reduce heat and simmer 10–15 minutes until potatoes are tender.
- Add greens: Stir in chopped sorrel or spinach and cook 3–5 minutes until wilted.
- Adjust flavor: Add lemon juice if needed for tanginess. Season with salt and pepper to taste.
- Serve: Ladle soup into bowls. Top with sliced hard-boiled eggs, a dollop of sour cream, and fresh herbs.
Notes
Sorrel gives traditional borscht its signature tangy flavor, but spinach with lemon juice is a great substitute. This soup can be served warm or chilled.
