- 2 cups broccoli florets
- 1 cup shredded carrots
- 1 bell pepper, thinly sliced
- 2 green onions, sliced (for garnish)

- Stir to combine and cook on LOW for 4–5 hours or HIGH for 2–3 hours until beef is tender and fully cooked.
- About 30 minutes before serving, add broccoli, carrots, and bell pepper.
- Cover and continue cooking until vegetables are tender but still crisp, about 20–30 minutes.
- Serve over brown rice, quinoa, or cauliflower rice for a complete meal.
- Garnish with green onions and sesame seeds before serving.
Notes
For extra flavor, marinate the beef for 30 minutes before adding to the crock pot. Adjust sweetness or spice to your taste. Works well for meal prep and keeps in the fridge for up to 4 days.
