  • 2 cups cooked rotisserie chicken, shredded
  • 8 oz penne or rotini pasta
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/2 cup Greek yogurt (plain)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 tsp Italian seasoning
  • Red pepper flakes (optional)

  1. Cook pasta according to package directions. Add broccoli during the last 2 minutes of cooking, then drain.
  2. Make sauce: Heat olive oil in a large skillet over medium heat. Add garlic and cook 30 seconds.
  3. Pour in chicken broth and milk, simmer 2–3 minutes.
  4. Stir in Greek yogurt and Parmesan cheese until smooth and creamy.
  5. Add shredded rotisserie chicken and Italian seasoning. Heat through.
  6. Add cooked pasta and broccoli. Toss to coat evenly.

Notes

Do not boil after adding yogurt to prevent curdling. Add spinach or peas for extra vegetables. Use whole wheat pasta for added fiber.
