Ingredients
Ingredients
- 2 cups mashed potatoes (cooled)
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 2–4 tablespoons milk (as needed)
- Butter or oil for frying
Instructions
Instructions
- Mix dry ingredients: In a bowl, combine flour, baking powder, and salt.
- Form dough: Add mashed potatoes and melted butter. Mix until combined, adding milk a tablespoon at a time until a soft dough forms.
- Roll out: Lightly flour a surface and roll dough to about 1/2-inch thickness.
- Cut: Cut into rounds or traditional triangles (farls).
- Cook: Heat butter or oil in a skillet over medium heat. Fry cakes for 3–4 minutes per side until golden brown and crisp.
- Serve: Enjoy warm with butter, eggs, bacon, or alongside your favorite Irish breakfast.
Notes
For traditional boxty, replace 1/2 cup mashed potatoes with 1/2 cup finely grated raw potato (squeezed dry). These cakes reheat well in a skillet or toaster oven.
