  • 1 cup hot water
  • 1 butterfly pea flower tea bag (or 1 tsp dried flowers)
  • 1 tbsp honey (adjust to taste)
  • 12 tbsp fresh lemon juice
  • 1/2 cup sparkling water or club soda
  • 1/2 cup ice
  • Lemon slices and edible flowers, for garnish

  1. Steep butterfly pea tea in hot water for 5 minutes, then remove tea bag or strain flowers.
  2. Stir in honey while tea is still warm until dissolved.
  3. Let the tea cool slightly.
  4. Fill a glass with ice and pour in the tea.
  5. Add sparkling water.
  6. Slowly pour in lemon juice and watch the color change from blue to purple.
  7. Garnish with lemon slices and edible flowers.
  8. Serve immediately.

Notes
