  • 5 cups mixed salad greens or spring mix
  • 2 Honeycrisp apples, thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup dried cranberries
  • 1/4 small red onion, thinly sliced
  • Honey Vinaigrette:
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

  1. Add the mixed greens to a large salad bowl.
  2. Top with sliced Honeycrisp apples, feta cheese, walnuts or pecans, dried cranberries, and red onion.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper.
  4. Drizzle the vinaigrette over the salad just before serving.
  5. Toss gently until all ingredients are evenly coated.
  6. Serve immediately and enjoy.

Notes

To keep the apple slices from browning, lightly toss them with a little lemon juice before adding to the salad. You can also add grilled chicken for extra protein or substitute goat cheese for feta.
