  • 2 cups cooked chicken, shredded or diced
  • 1 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 16-oz package gnocchi
  • 1 cup frozen peas and carrots
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

  1. In a large pot or deep skillet, heat butter over medium heat. Sauté onion until translucent, 3–4 minutes. Add garlic and cook 30 seconds.
  2. Add chicken broth, heavy cream, thyme, salt, and pepper. Stir to combine and bring to a simmer.
  3. Add gnocchi and cook according to package instructions, usually 3–5 minutes, until tender.
  4. Stir in cooked chicken and frozen peas and carrots. Cook 2–3 minutes until heated through.
  5. Optionally stir in cheddar cheese until melted and creamy.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, you can add sautéed mushrooms or a sprinkle of Parmesan on top. This recipe is perfect for meal prep and reheats beautifully.
