- 1 16-oz package gnocchi
- 1 cup frozen peas and carrots
- 1/2 cup shredded cheddar cheese (optional)

- In a large pot or deep skillet, heat butter over medium heat. Sauté onion until translucent, 3–4 minutes. Add garlic and cook 30 seconds.
- Add chicken broth, heavy cream, thyme, salt, and pepper. Stir to combine and bring to a simmer.
- Add gnocchi and cook according to package instructions, usually 3–5 minutes, until tender.
- Stir in cooked chicken and frozen peas and carrots. Cook 2–3 minutes until heated through.
- Optionally stir in cheddar cheese until melted and creamy.
- Serve hot, garnished with fresh parsley if desired.
Notes
For extra flavor, you can add sautéed mushrooms or a sprinkle of Parmesan on top. This recipe is perfect for meal prep and reheats beautifully.
