  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn (fresh or frozen)
  • 2 cups chicken broth
  • 1 cup milk (or unsweetened almond milk)
  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

  6. Add milk, thyme, salt, and pepper. Simmer 5–7 minutes until thickened.
  7. Stir in cooked chicken, peas, and corn.
  8. Simmer another 5 minutes until heated through.
