- 1 small onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, thinly sliced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (optional)
- 1 tbsp olive oil

- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Cook ground beef until browned. Drain excess fat.
- Add onion and garlic to the beef and sauté 2–3 minutes until softened.
- Stir in cream of mushroom soup, milk, salt, pepper, and paprika until well combined.
- In a greased 9×13-inch baking dish, layer half of the sliced potatoes, then half of the mixed vegetables, and half of the beef mixture. Repeat layers.
- Cover with foil and bake for 35–40 minutes, until potatoes are tender.
- Remove foil, sprinkle cheddar cheese on top, and bake an additional 5–10 minutes until cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
For extra flavor, add a dash of Worcestershire sauce to the beef mixture. You can also use sweet potatoes or add mushrooms for more depth.
