  • 1 lb smoked sausage, sliced
  • 4 cups peeled and diced potatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp butter or olive oil
  • Optional: chopped green onions or parsley for garnish

  1. In a large pot, heat butter or olive oil over medium heat. Add sausage slices and cook until browned.
  2. Add onion and garlic, sauté 2–3 minutes until fragrant and softened.
  3. Stir in potatoes, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to simmer. Cook 15–20 minutes, until potatoes are tender.
  5. Use a potato masher or immersion blender to partially mash the soup for a creamy texture, leaving some potato chunks.
  6. Stir in heavy cream and cook an additional 5 minutes until heated through.
  7. Serve hot, garnished with green onions or parsley if desired.

Notes

Adjust the level of spice by adding more or less Cajun seasoning. For a vegetarian version, omit sausage and use vegetable broth.
