- 4 cups peeled and diced potatoes

- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp butter or olive oil
- Optional: chopped green onions or parsley for garnish

- In a large pot, heat butter or olive oil over medium heat. Add sausage slices and cook until browned.
- Add onion and garlic, sauté 2–3 minutes until fragrant and softened.
- Stir in potatoes, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat to simmer. Cook 15–20 minutes, until potatoes are tender.
- Use a potato masher or immersion blender to partially mash the soup for a creamy texture, leaving some potato chunks.
- Stir in heavy cream and cook an additional 5 minutes until heated through.
- Serve hot, garnished with green onions or parsley if desired.
Notes
Adjust the level of spice by adding more or less Cajun seasoning. For a vegetarian version, omit sausage and use vegetable broth.
