- 1 small onion, diced

- 1/2 cup shredded cheddar cheese
- 1/2 tsp paprika
- 1/2 tsp dried thyme

- Sauté: Turn Instant Pot to sauté mode and melt butter. Add onion and cook until soft, then add garlic for 30 seconds.
- Add diced chicken and cook lightly browned (not fully cooked).
- Add rice: Stir in rice, paprika, thyme, salt, and pepper.
- Pour in chicken broth and gently stir, scraping the bottom to prevent sticking.
- Seal lid and cook on HIGH pressure for 8 minutes.
- Allow natural release for 5 minutes, then quick release remaining pressure.
- Make creamy: Stir in milk, heavy cream, cheese, and vegetables.
- Let sit 2–3 minutes to thicken. Garnish with parsley and serve warm.
Notes
For extra richness use rotisserie chicken added after pressure cooking. Add mushrooms for more flavor. If rice thickens too much, stir in a splash of warm broth before serving.
