- 1 lb boneless, skinless chicken breasts or thighs, cut into chunks
- 1 cup long-grain rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream or half-and-half
- 1 cup frozen peas or mixed vegetables
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- Optional: chopped parsley for garnish

- Set the Instant Pot to sauté mode. Heat olive oil and sauté onion and garlic for 2–3 minutes until fragrant.
- Add chicken chunks and cook 2–3 minutes until lightly browned.
- Add rice, chicken broth, salt, pepper, and paprika. Stir to combine.
- Seal the Instant Pot lid and cook on high pressure for 8 minutes.
- Quick release the pressure and carefully open the lid.
- Stir in heavy cream and frozen peas. Let sit for 2–3 minutes to warm through.
- Garnish with chopped parsley and serve hot.
Notes
For a richer flavor, use chicken thighs instead of breasts. You can also sprinkle shredded cheese on top before serving.
