  • 1 lb boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 cup long-grain rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1 cup frozen peas or mixed vegetables
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Optional: chopped parsley for garnish

  1. Set the Instant Pot to sauté mode. Heat olive oil and sauté onion and garlic for 2–3 minutes until fragrant.
  2. Add chicken chunks and cook 2–3 minutes until lightly browned.
  3. Add rice, chicken broth, salt, pepper, and paprika. Stir to combine.
  4. Seal the Instant Pot lid and cook on high pressure for 8 minutes.
  5. Quick release the pressure and carefully open the lid.
  6. Stir in heavy cream and frozen peas. Let sit for 2–3 minutes to warm through.
  7. Garnish with chopped parsley and serve hot.

Notes

For a richer flavor, use chicken thighs instead of breasts. You can also sprinkle shredded cheese on top before serving.
