Ingredients

Scale

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 tbsp Irish cream liqueur (e.g., Baileys)
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Optional glaze: 1/2 cup powdered sugar + 1–2 tsp Irish cream liqueur

Instructions

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, and Irish cream liqueur, mixing until combined.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients and mix until a soft dough forms.
  4. Shape cookies: Scoop dough into 1–2 tbsp portions, roll into balls, and place on prepared baking sheet 2 inches apart.
  5. Bake: Bake 10–12 minutes until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  6. Add glaze (optional): Mix powdered sugar with Irish cream liqueur until smooth and drizzle over cooled cookies.
  7. Serve: Enjoy soft, subtly boozy Irish Cream Cookies with coffee or tea.

Notes

For a non-alcoholic version, substitute Irish cream with milk or cream-flavored extract. Cookies store in an airtight container for up to 3 days. You can also roll the dough in sugar before baking for extra sparkle.
