- Preheat oven: Preheat to 350°F (175°C). Grease a 1½–2 quart baking dish.
- Cream base: In a bowl, beat sugar and butter until light and fluffy. Add egg yolks one at a time, mixing well after each addition.
- Add lemon: Mix in lemon zest and lemon juice.
- Add dry & milk: Stir in flour and salt, then gradually mix in milk until smooth.
- Whip whites: In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
- Bake: Pour batter into prepared dish. Place dish in a larger pan and add hot water halfway up the sides (water bath).
- Cook: Bake 40–45 minutes until top is lightly golden and center is just set.
- Serve: Cool slightly, dust with powdered sugar, and serve warm to reveal the pudding layer beneath.
Notes
Serve with lightly whipped cream or fresh berries. The water bath helps create the signature soft pudding layer, so don’t skip this step. Best enjoyed warm the same day it’s baked.
