Description
Irish Pot Roast is a hearty, slow-cooked comfort meal made with tender beef chuck, root vegetables, and a rich savory broth. Perfect for Sunday dinners or St. Patrick’s Day, this classic dish is deeply flavorful and beautifully satisfying.
Ingredients
Ingredients
- 3 lbs beef chuck roast
- Salt and black pepper to taste
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 1 tbsp tomato paste
- 4 carrots, cut into chunks
- 4 medium potatoes, halved
- 2 sprigs fresh thyme (or 1 tsp dried)
- 2 bay leaves
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
Instructions
- Season & sear: Pat roast dry and season with salt and pepper. Lightly dust with flour. Heat olive oil in a large Dutch oven and sear roast on all sides until browned. Remove and set aside.
- Sauté aromatics: In the same pot, add onion and cook until softened. Stir in garlic and tomato paste; cook 1 minute.
- Deglaze: Pour in a splash of broth and scrape up browned bits from the bottom of the pot.
- Braise: Return roast to pot. Add remaining broth, thyme, and bay leaves. Cover and simmer on low for 2 hours.
- Add vegetables: Add carrots and potatoes around the roast. Cover and cook another 45–60 minutes until beef is fork-tender and vegetables are soft.
- Finish: Remove bay leaves, adjust seasoning, and garnish with fresh parsley before serving.
Notes
For deeper flavor, replace 1 cup of broth with stout beer. This pot roast also works beautifully in a slow cooker (8 hours on low). Leftovers are perfect for sandwiches or shepherd’s pie filling.
