- Salt and pepper, to taste
- 1 package (17.3 oz) puff pastry sheets, thawed
- 1 egg, beaten (for egg wash)
- Optional: sesame seeds or poppy seeds for topping

- Preheat oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare sausage filling: In a bowl, combine sausage meat, chopped onion, thyme, salt, and pepper. Mix until well combined.
- Roll out pastry: On a lightly floured surface, roll puff pastry sheets into rectangles. Cut each sheet into 2–3 long strips depending on desired size.
- Assemble rolls: Place a line of sausage mixture along the center of each strip. Fold pastry over the sausage and seal edges with a little beaten egg. Cut into individual rolls if desired.
- Brush with egg wash: Brush the tops with beaten egg and sprinkle with sesame or poppy seeds if using.
- Bake: Bake 20–25 minutes until pastry is golden and sausage is cooked through.
- Serve: Serve warm as an appetizer or snack. Delicious with mustard or ketchup on the side.
Notes
You can add a pinch of nutmeg or allspice to the sausage mixture for extra flavor. These rolls can be made ahead and frozen; bake from frozen adding a few extra minutes to the cooking time. Leftovers store in the fridge for 2–3 days.
