- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp dried thyme

- 1/2 tsp red pepper flakes (optional)
- 6 cups chicken broth
- 1 cup small pasta (orzo, ditalini, or acini di pepe)
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley or basil for garnish

- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened.
- Add chicken, thyme, oregano, red pepper flakes (if using), and season with salt and pepper. Stir for 1–2 minutes.
- Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 25–30 minutes, until chicken is cooked through.
- Remove chicken, shred it with two forks, and return it to the pot.
- Add pasta and cook according to package instructions until tender, about 8–10 minutes.
- Stir in Parmesan cheese and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley or basil.
Notes
Optional: Add a splash of lemon juice for brightness. You can also add spinach or kale in the last 5 minutes of cooking for extra greens.
