  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 cup small pasta (orzo, ditalini, or acini di pepe)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened.
  2. Add chicken, thyme, oregano, red pepper flakes (if using), and season with salt and pepper. Stir for 1–2 minutes.
  3. Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 25–30 minutes, until chicken is cooked through.
  4. Remove chicken, shred it with two forks, and return it to the pot.
  5. Add pasta and cook according to package instructions until tender, about 8–10 minutes.
  6. Stir in Parmesan cheese and adjust seasoning as needed.
  7. Serve hot, garnished with fresh parsley or basil.

Notes

Optional: Add a splash of lemon juice for brightness. You can also add spinach or kale in the last 5 minutes of cooking for extra greens.
