- Add chicken and cook until lightly browned, about 5 minutes.
- Pour in chicken broth, add oregano, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to simmer and cook for 15 minutes, until chicken is cooked through.
- Add pasta and cook 8–10 minutes until tender.
- Remove bay leaf, adjust seasoning, and serve hot, garnished with parsley and Parmesan if desired.
Notes
For extra depth, you can add a squeeze of lemon juice before serving. Swap chicken with turkey for a different twist, or add vegetables like zucchini or spinach.
