  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 lb boneless chicken thighs or breast, diced
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1/2 cup small pasta (orzo or ditalini)
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese for serving (optional)

  1. In a large pot, heat olive oil over medium heat. Sauté onion, garlic, carrots, and celery until softened, 5–6 minutes.
  2. Add chicken and cook until lightly browned, about 5 minutes.
  3. Pour in chicken broth, add oregano, thyme, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce heat to simmer and cook for 15 minutes, until chicken is cooked through.
  5. Add pasta and cook 8–10 minutes until tender.
  6. Remove bay leaf, adjust seasoning, and serve hot, garnished with parsley and Parmesan if desired.

Notes

For extra depth, you can add a squeeze of lemon juice before serving. Swap chicken with turkey for a different twist, or add vegetables like zucchini or spinach.
