  • 34 lb beef chuck roast
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup dry white wine or extra beef broth
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: fresh parsley for garnish

  1. Preheat oven to 325°F (163°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, 4–5 minutes per side. Remove and set aside.
  3. Add onions to the pot and cook 8–10 minutes until caramelized.
  4. Add garlic and cook 30 seconds until fragrant.
  5. Deglaze the pot with wine (or extra broth), scraping up browned bits.
  6. Return roast to the pot. Add beef broth, Worcestershire sauce, thyme, salt, and pepper.
  7. Cover and transfer to oven. Roast for 3–4 hours, until meat is fork-tender.
  8. Remove roast and let rest 10 minutes before slicing. Serve with caramelized onions and pan juices. Garnish with parsley if desired.

Notes

For added depth, add a bay leaf while roasting. Serve with mashed potatoes or roasted vegetables for a complete meal.
