- 3–4 lb beef chuck roast
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup dry white wine or extra beef broth
- 2 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: fresh parsley for garnish

- Preheat oven to 325°F (163°C).
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, 4–5 minutes per side. Remove and set aside.
- Add onions to the pot and cook 8–10 minutes until caramelized.
- Add garlic and cook 30 seconds until fragrant.
- Deglaze the pot with wine (or extra broth), scraping up browned bits.
- Return roast to the pot. Add beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Cover and transfer to oven. Roast for 3–4 hours, until meat is fork-tender.
- Remove roast and let rest 10 minutes before slicing. Serve with caramelized onions and pan juices. Garnish with parsley if desired.
Notes
For added depth, add a bay leaf while roasting. Serve with mashed potatoes or roasted vegetables for a complete meal.
