  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup sour cream or Greek yogurt
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tbsp flour (for coating blueberries)
  • For the Lemon Glaze
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. In a bowl whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in lemon zest, lemon juice, vanilla extract, and sour cream.
  6. Gradually add dry ingredients until just combined.
  7. Toss blueberries with 1 tbsp flour and gently fold them into the batter.
  8. Pour batter into prepared Bundt pan and smooth the top.
  9. Bake for 50–55 minutes or until a toothpick inserted comes out clean.
  10. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
  11. Whisk powdered sugar with lemon juice to make glaze and drizzle over the cooled cake.

Notes

Tossing blueberries with flour helps prevent them from sinking in the cake. For extra lemon flavor, add an additional teaspoon of lemon zest to the glaze. Store cake covered at room temperature for up to 3 days.
