  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • Optional: powdered sugar for dusting

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine 1 1/2 cups flour, 1/2 cup sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press half into the prepared pan for the crust.
  3. Bake crust for 15 minutes until lightly golden.
  4. Meanwhile, whisk together eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and zest for the filling.
  5. Pour filling over the baked crust.
  6. Crumble remaining half of the crust mixture over the lemon layer.
  7. Bake an additional 25–30 minutes until filling is set and topping is golden.
  8. Cool completely before cutting into bars. Dust with powdered sugar if desired.

Notes

For extra tang, add more lemon zest to the filling. Store bars in an airtight container in the refrigerator for up to 4 days.
