  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups green cabbage, shredded
  • 2 carrots, sliced
  • 4 cups vegetable or chicken broth
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill, chopped (or 1 tsp dried)
  • Salt and black pepper, to taste
  • Optional: cooked chicken or white beans for added protein

  1. Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic and cook 2–3 minutes until fragrant.
  2. Add vegetables: Stir in cabbage and carrots. Cook 3–5 minutes until slightly softened.
  3. Add broth: Pour in broth and bring to a boil. Reduce heat and simmer 15–20 minutes until vegetables are tender.
  4. Add lemon & dill: Stir in lemon juice and dill. Season with salt and pepper to taste.
  5. Serve: Ladle into bowls and garnish with extra dill if desired.
