- 2 tbsp fresh lemon juice
- 1 tsp dried Italian herbs
- Salt and black pepper, to taste
- Optional: fresh spinach or kale for extra greens
- Fresh parsley or basil for garnish

- Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic and cook 2–3 minutes until fragrant.
- Add artichokes & broth: Stir in chopped artichokes and broth. Bring to a boil, then reduce heat and simmer 10–15 minutes.
- Blend (optional): For a creamier texture, blend part of the soup using an immersion blender.
- Add cream & cheese: Stir in heavy cream and Parmesan until melted and smooth.
- Add lemon & season: Stir in lemon juice, herbs, salt, and pepper. Add spinach or kale if using and cook until wilted.
- Serve: Ladle into bowls and garnish with fresh herbs and extra Parmesan if desired.
Notes
Adjust lemon juice to your taste for more brightness. For a lighter version, use milk instead of cream. You can also add shredded chicken or white beans for extra protein.
