  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 12 tbsp cold water
  • For the Mango Curd
  • 1 cup mango puree (fresh or canned)
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1 tbsp lemon juice
  • 1/4 cup unsalted butter, cubed
  • 1 tsp vanilla extract
  • Optional Toppings
  • Fresh mango slices
  • Whipped cream
  • Mint leaves

  1. Prepare the crust: In a bowl combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  2. Add egg yolk and 1–2 tbsp cold water until dough comes together.
  3. Press dough into a 9-inch tart pan. Chill for 20 minutes.
  4. Preheat oven to 350°F (175°C). Bake crust for 18–20 minutes until lightly golden. Cool completely.
  5. Make the mango curd: In a saucepan whisk together mango puree, sugar, egg yolks, and lemon juice.
  6. Cook over medium heat, stirring constantly, until thickened (about 6–8 minutes).
  7. Remove from heat and whisk in butter and vanilla until smooth.
  8. Assemble the tart: Pour mango curd into the cooled tart crust and spread evenly.
  9. Refrigerate at least 2 hours until set.
  10. Top with fresh mango slices or whipped cream before serving.

Notes

Use ripe, sweet mangoes for the best flavor. The tart can be refrigerated for up to 3 days. For a smoother curd, strain the mixture before pouring it into the crust.
