- 1 cup mango puree (fresh or canned)
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1 tbsp lemon juice
- 1/4 cup unsalted butter, cubed
- 1 tsp vanilla extract

- Prepare the crust: In a bowl combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Add egg yolk and 1–2 tbsp cold water until dough comes together.
- Press dough into a 9-inch tart pan. Chill for 20 minutes.
- Preheat oven to 350°F (175°C). Bake crust for 18–20 minutes until lightly golden. Cool completely.
- Make the mango curd: In a saucepan whisk together mango puree, sugar, egg yolks, and lemon juice.
- Cook over medium heat, stirring constantly, until thickened (about 6–8 minutes).
- Remove from heat and whisk in butter and vanilla until smooth.
- Assemble the tart: Pour mango curd into the cooled tart crust and spread evenly.
- Refrigerate at least 2 hours until set.
- Top with fresh mango slices or whipped cream before serving.
Notes
Use ripe, sweet mangoes for the best flavor. The tart can be refrigerated for up to 3 days. For a smoother curd, strain the mixture before pouring it into the crust.
