Description

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp pure maple syrup
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup roasted vegetables (broccoli, bell peppers, zucchini)
  • 1/4 cup shredded carrots or optional toppings
  • Fresh parsley for garnish (optional)

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, Dijon mustard, maple syrup, garlic powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and brush with the maple Dijon mixture.
  4. Bake for 20–25 minutes until chicken is cooked through and slightly caramelized.
  5. Meanwhile, roast or steam your choice of vegetables and cook quinoa or rice.
  6. Slice the chicken and assemble bowls: start with quinoa/rice, add vegetables, top with chicken slices, and drizzle with any remaining sauce.
  7. Garnish with shredded carrots or fresh parsley and serve warm.

Notes

Marinate chicken for 30 minutes for extra flavor. Swap vegetables based on season or preference. Store components separately for meal prep.
