- Mix wet ingredients: In a large bowl, whisk melted butter and melted chocolate until smooth. Add sugars and mix well. Beat in eggs and vanilla.
- Combine dry ingredients: In a separate bowl, whisk flour, cocoa powder, baking powder, and salt.
- Form batter: Gradually stir dry ingredients into wet mixture until combined. Fold in Mint M&Ms and extra chocolate chips if using.
- Scoop dough: Drop tablespoon-sized portions onto prepared baking sheets, spacing 2 inches apart.
- Bake: Bake for 9–11 minutes until edges are set but centers remain soft. Do not overbake.
- Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra mint flavor, add 1/4 teaspoon peppermint extract. Store in an airtight container for up to 4 days.
