- Cream butter & sugar: Beat butter and sugar until light and fluffy.
- Add eggs & flavor: Mix in eggs, vanilla extract, lemon juice, and lemon zest until smooth.
- Combine dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Make dough: Gradually add dry ingredients to wet mixture and mix until just combined.
- Scoop cookies: Use a cookie scoop or spoon to place dough on baking sheet, spacing about 2 inches apart.
- Bake: Bake 10–12 minutes, until edges are lightly golden but centers remain soft.
- Cool & finish: Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.
Notes
For extra lemon flavor, add a teaspoon of lemon extract. Avoid overbaking to keep cookies soft and moist.
