- 3 tbsp butter
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream

- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tbsp olive oil
- French bread croutons or baguette slices for serving (optional)

- Add sliced onions and cook slowly, stirring occasionally, until caramelized (about 15–20 minutes).
- Add garlic and cook 30 seconds until fragrant.
- Pour in beef broth and bring to a simmer.
- Add pasta and thyme. Cook according to pasta package instructions, stirring occasionally, until pasta is tender and most liquid is absorbed.
- Reduce heat and stir in heavy cream and Parmesan cheese until creamy.
- Season with salt and pepper to taste.
- Serve warm, optionally topped with croutons or toasted baguette slices.
Notes
Caramelizing onions slowly brings out deep flavor. Substitute half-and-half for a lighter creamy sauce. Add mushrooms for extra heartiness.
