  • 1 lb pasta (penne, rotini, or shells)
  • 3 tbsp butter
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tsp thyme (dried or fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • French bread croutons or baguette slices for serving (optional)

  1. In a large skillet or pot, heat olive oil and butter over medium heat.
  2. Add sliced onions and cook slowly, stirring occasionally, until caramelized (about 15–20 minutes).
  3. Add garlic and cook 30 seconds until fragrant.
  4. Pour in beef broth and bring to a simmer.
  5. Add pasta and thyme. Cook according to pasta package instructions, stirring occasionally, until pasta is tender and most liquid is absorbed.
  6. Reduce heat and stir in heavy cream and Parmesan cheese until creamy.
  7. Season with salt and pepper to taste.
  8. Serve warm, optionally topped with croutons or toasted baguette slices.

Notes

Caramelizing onions slowly brings out deep flavor. Substitute half-and-half for a lighter creamy sauce. Add mushrooms for extra heartiness.
