  • 3 tbsp butter
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 tsp thyme (fresh or dried)
  • Salt and black pepper, to taste
  • 1/2 cup grated Gruyère or Swiss cheese
  • Optional: fresh parsley for garnish

  2. Add onions and cook, stirring occasionally, until caramelized (about 20 minutes).
  3. Add garlic and thyme, sauté 1–2 minutes until fragrant.
  4. Add pasta and broth. Bring to a simmer and cook, stirring occasionally, until pasta is tender and liquid has mostly absorbed (about 12–15 minutes).
  5. Season with salt and pepper.
  6. Stir in grated cheese until melted and creamy.
  7. Garnish with fresh parsley and serve immediately.

Notes

For extra depth, deglaze the pan with a splash of white wine before adding broth.
