- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth

- 1/2 cup grated Gruyère or Swiss cheese
- Optional: fresh parsley for garnish

- Add garlic and thyme, sauté 1–2 minutes until fragrant.
- Add pasta and broth. Bring to a simmer and cook, stirring occasionally, until pasta is tender and liquid has mostly absorbed (about 12–15 minutes).
- Season with salt and pepper.
- Stir in grated cheese until melted and creamy.
- Garnish with fresh parsley and serve immediately.
Notes
For extra depth, deglaze the pan with a splash of white wine before adding broth.
