- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 4 cups beef or chicken broth
- 2 tsp Italian seasoning
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream (optional for creaminess)
- Salt and freshly ground black pepper, to taste
- For topping:
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish

- In a large pot over medium heat, cook ground beef until browned. Drain excess fat if needed.
- Add onion and garlic; sauté until softened and fragrant.
- Stir in crushed tomatoes, diced tomatoes, broth, and Italian seasoning. Bring to a simmer.
- Add broken lasagna noodles and cook according to package directions, stirring occasionally to prevent sticking.
- Stir in heavy cream if using. Season with salt and pepper.
- Serve hot, topping each bowl with ricotta, mozzarella, Parmesan, and fresh herbs.
Notes
For a lighter version, substitute ground turkey for beef. Add spinach during the last few minutes of cooking for extra nutrients. Store leftovers in the refrigerator for up to 3 days.
