- 12 oz smoked sausage, sliced
- 1 cup long-grain white rice (uncooked)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup diced tomatoes
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp Italian seasoning
- Salt and black pepper to taste
- 1/2 cup bell pepper, diced (optional)
- Fresh parsley for garnish

- Brown sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until lightly browned. Remove and set aside.
- Add onion (and bell pepper if using) and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add rice: Stir in uncooked rice and toast for 1 minute.
- Pour in chicken broth and diced tomatoes.
- Add paprika, thyme, Italian seasoning, salt, and pepper.
- Return sausage to the pan and stir.
- Bring to a simmer, cover, and cook 15–18 minutes until rice is tender.
- Rest 5 minutes, fluff with a fork, garnish with parsley, and serve warm.
Notes
Use spicy sausage for extra heat. Add peas or corn near the end of cooking for vegetables. If rice is firm, add a splash of broth and cook a few minutes longer.
