  • 12 oz smoked sausage, sliced
  • 1 cup long-grain white rice (uncooked)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup diced tomatoes
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1/2 cup bell pepper, diced (optional)
  • Fresh parsley for garnish

  1. Brown sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until lightly browned. Remove and set aside.
  2. Add onion (and bell pepper if using) and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
  3. Add rice: Stir in uncooked rice and toast for 1 minute.
  4. Pour in chicken broth and diced tomatoes.
  5. Add paprika, thyme, Italian seasoning, salt, and pepper.
  6. Return sausage to the pan and stir.
  7. Bring to a simmer, cover, and cook 15–18 minutes until rice is tender.
  8. Rest 5 minutes, fluff with a fork, garnish with parsley, and serve warm.

Notes

Use spicy sausage for extra heat. Add peas or corn near the end of cooking for vegetables. If rice is firm, add a splash of broth and cook a few minutes longer.
