- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Remove outer cabbage leaves and cut the cabbage into 1-inch thick steaks.
- Arrange the cabbage steaks on the baking sheet.
- In a small bowl, mix olive oil, minced garlic, paprika, salt, and pepper.
- Brush the mixture generously over both sides of each cabbage steak.
- Roast for 25–30 minutes, flipping halfway through, until tender and caramelized on the edges.
- Garnish with parsley, Parmesan, or a squeeze of lemon before serving.
Notes
You can add a sprinkle of chili flakes for heat. Serve alongside roasted meats, fish, or enjoy as a hearty vegetarian main. For extra flavor, drizzle balsamic glaze before serving.
