  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup peach puree (fresh or canned, unsweetened)
  • 2 tbsp sparkling wine or champagne
  • 1/2 cup milk
  • Optional: whipped cream or frosting and fresh peach slices for topping

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla extract.
  5. Mix in peach puree and sparkling wine until combined.
  6. Alternately add dry ingredients and milk, beginning and ending with dry ingredients, until just combined.
  7. Divide batter evenly among cupcake liners, filling about 2/3 full.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Top with whipped cream or frosting and a fresh peach slice if desired before serving.

Notes

Use ripe peaches for the best flavor. Sparkling wine adds a subtle touch; you can omit for a non-alcoholic version.
