- 1/2 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh or canned peaches, sliced
- 2 tbsp brown sugar (for topping)

- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine flour, granulated sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the prepared pan to form the crust.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Spread over the crust.
- Arrange sliced peaches evenly over the cream cheese layer.
- Sprinkle remaining crumb mixture and brown sugar over the top.
- Bake for 35–40 minutes until golden and set. Cool completely before cutting into bars.
Notes
Use ripe peaches for best flavor. These bars can be stored in the refrigerator for up to 4 days. Optional: drizzle with honey or a dusting of powdered sugar before serving.
