  • 2 cups fresh pineapple, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 tbsp honey or agave syrup
  • Salt and pepper, to taste
  • Optional: 1/2 jalapeño, finely diced for heat

  2. In a small bowl, whisk together lime juice, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.

  5. Chill for 10–15 minutes before serving to let flavors meld.
  6. Serve as a refreshing side or light snack.

Notes

For extra crunch, sprinkle some toasted pumpkin seeds on top. You can also add a handful of shredded coconut for a tropical twist.
