- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and cut
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1/2 cup small pasta (like ditalini)
- Salt and black pepper, to taste
- For the pistou:
- 1 cup fresh basil leaves
- 2 cloves garlic
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese

- Sauté vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook 5 minutes until softened.
- Add vegetables & broth: Stir in zucchini, green beans, white beans, diced tomatoes, and broth. Bring to a boil, then simmer 15 minutes.
- Add pasta: Stir in pasta and cook another 8–10 minutes until tender.
- Make pistou: Blend basil, garlic, olive oil, and Parmesan until smooth.
- Finish & serve: Stir a spoonful of pistou into each bowl before serving. Adjust seasoning with salt and pepper.
Notes
Pistou is similar to pesto but traditionally made without nuts. You can add more vegetables like potatoes or spinach depending on what you have on hand.
