Description

This Quick One Pot Sausage and Rice is a fast, flavorful, and hearty meal perfect for busy weeknights. Juicy sausage, tender rice, and savory vegetables cook together in one pot for minimal cleanup and maximum taste.

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 1/2 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • Optional: chopped parsley for garnish

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add sausage slices and cook until lightly browned.
  2. Add onion, bell pepper, and garlic. Sauté 2–3 minutes until softened.
  3. Stir in rice, paprika, thyme, salt, and pepper.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender and liquid is absorbed.
  6. Fluff rice with a fork and serve hot, garnished with parsley if desired.

Notes

You can add frozen peas or corn during the last 5 minutes of cooking for extra vegetables. For a spicier dish, add a pinch of cayenne or hot sauce.
