  • 1 package (17.3 oz) puff pastry sheets, thawed
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 1/4 cup powdered sugar (for whipped cream)
  • 1 tsp vanilla extract
  • 1 cup pastry cream or custard (store-bought or homemade)
  • Powdered sugar for dusting

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out puff pastry sheets and cut into rectangles (about 3×4 inches). Place on baking sheet.
  3. Prick pastry with a fork to prevent puffing excessively. Bake 12–15 minutes until golden and crisp. Cool completely.
  4. Prepare whipped cream by beating heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. To assemble: Spread a layer of pastry cream on one puff pastry rectangle, top with raspberries, then another layer of whipped cream. Place a second puff pastry rectangle on top.
  6. Repeat layers for remaining napoleons. Dust the tops with powdered sugar before serving.

Notes

Assemble napoleons just before serving to keep the pastry crisp. You can also drizzle with melted chocolate for extra flair.
