This Slow Cooker Roast is tender, juicy, and full of flavor. With minimal prep, the roast slowly cooks in a mix of herbs, garlic, and broth to create a comforting meal perfect for busy days.

- 3–4 lb beef chuck roast
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 large onion, sliced
- 4 cloves garlic, smashed
- 2 cups beef broth
- Optional: 3–4 carrots, chopped; 3–4 potatoes, chopped

- Season roast with salt, pepper, garlic powder, rosemary, and thyme.
- Heat olive oil in a skillet over medium-high heat and sear roast on all sides until browned (optional but recommended).
- Place sliced onions and garlic at the bottom of the slow cooker and set the roast on top.
- Add broth around the roast. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the meat is tender.
- Optional: Add carrots and potatoes during the last 4 hours of cooking for a complete meal.
- Remove roast, slice or shred, and serve with vegetables and pan juices.
Notes
You can use chicken or vegetable broth for a lighter flavor. For a thicker gravy, mix 2 tbsp cornstarch with 2 tbsp water and stir into cooking juices in the last 15 minutes of cooking.
