- 1 packet French onion soup mix
- 2 cups beef broth

- Optional: fresh thyme or parsley for garnish

- Heat olive oil in a skillet over medium heat. Sear the chuck roast on all sides until browned.
- Place sliced onions in the bottom of a 6-quart crock pot.
- Set the seared roast on top of the onions.
- In a bowl, whisk together French onion soup mix, beef broth, garlic, and Worcestershire sauce.
- Pour the mixture over the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender.
- Shred or slice the roast and serve with onions and sauce spooned over the top.
Notes
For extra richness, add sliced mushrooms during the last 2 hours of cooking. This pot roast pairs perfectly with mashed potatoes, egg noodles, or crusty bread.
