- 3–4 lb chuck roast
- 2 tbsp olive oil
- 3 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 packet (1 oz) French onion soup mix
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1/2 tsp black pepper
- Optional: 1 tbsp cornstarch + 2 tbsp water (for thickening)

- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
- Add sliced onions to the skillet and cook until softened and lightly caramelized, about 8–10 minutes.
- Place onions in the bottom of the crockpot and set the roast on top.
- Sprinkle French onion soup mix evenly over the roast.
- Add garlic, thyme, black pepper, beef broth, and Worcestershire sauce.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until fork-tender.
- Optional: Remove roast and thicken gravy with cornstarch slurry on HIGH for 10–15 minutes.
- Shred or slice roast and serve with onion gravy.
Notes
This pot roast pairs perfectly with mashed potatoes, egg noodles, or crusty bread. Leftovers make amazing French dip sandwiches the next day.
