Ingredients
For the Sugar Cookies
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the Icing
- 2 cups powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
- Green food coloring
- Green sprinkles (optional)

- Preheat: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter & sugar: Beat butter and sugar until light and fluffy. Add egg and vanilla and mix well.
- Mix dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
- Combine: Gradually add dry ingredients to wet mixture until a soft dough forms.
- Roll & cut: Roll dough to 1/4-inch thickness on a floured surface. Cut into shamrock shapes.
- Bake: Place cookies on prepared baking sheets and bake 8–10 minutes until edges are lightly golden. Cool completely.
- Make icing: Whisk powdered sugar, milk, and vanilla until smooth. Add green food coloring.
- Decorate: Spread or pipe icing onto cooled cookies and add sprinkles if desired. Allow icing to set before serving.
Notes
Chill dough for 30 minutes if it becomes too soft to handle. Store cookies in an airtight container for up to 5 days.
