- Cream butter & sugar: Beat butter and sugar until light and fluffy. Mix in egg and vanilla.
- Combine dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
- Form dough: Gradually mix dry ingredients into wet mixture until a soft dough forms.
- Roll & cut: Roll dough to 1/4-inch thickness on a lightly floured surface. Cut into shamrock shapes.
- Bake: Place cookies on baking sheet and bake for 8–10 minutes, until edges are lightly golden.
- Cool & decorate: Let cool completely before decorating with icing or green sanding sugar.
Notes
If the dough becomes too soft while rolling, chill for 20–30 minutes. Store decorated cookies in an airtight container for up to 4 days.
