- 3 large potatoes, peeled and cubed
- 3 tbsp butter
- 1/3 cup milk

- Brown the beef: Heat olive oil in a large skillet over medium-high heat. Brown beef cubes on all sides. Transfer to slow cooker.
- Sauté vegetables: In the same skillet, cook onion, carrots, and garlic for 3–4 minutes. Stir in tomato paste and cook 1 minute more.
- Slow cook: Add vegetables to slow cooker along with beef broth, Worcestershire sauce, thyme, salt, and pepper. Cover and cook on low for 6–8 hours until beef is tender.
- Prepare potatoes: Near the end of cooking time, boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper.
- Assemble pie: Preheat oven to 375°F (190°C). Transfer meat mixture to a baking dish if needed. Spread mashed potatoes evenly over the top.
- Bake: Bake 20–25 minutes until potato topping is lightly golden. Broil 2–3 minutes for extra browning if desired.
- Let rest 5–10 minutes before serving.
Notes
For extra richness, add a splash of Irish stout to the beef mixture. Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven. This dish also freezes well for make-ahead meals.
