Slow Cooker Beef and Noodles is a hearty, comforting dish with tender beef cooked in a rich gravy and served over soft egg noodles. Perfect for a hands-off weeknight dinner.

- 2 lbs beef chuck roast, cut into 2-inch pieces
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 4 cups beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp cornstarch mixed with 2 tbsp water (for thickening)
- 12 oz egg noodles
- Optional garnish: fresh parsley

- Place beef, onion, garlic, salt, pepper, thyme, beef broth, and Worcestershire sauce in the slow cooker.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
- Remove beef and shred or cut into bite-sized pieces. Return beef to slow cooker.
- Stir in cornstarch slurry to thicken the gravy. Cook on HIGH for 15–20 minutes until thickened.
- Cook egg noodles separately according to package instructions and drain.
- Serve beef and gravy over cooked noodles. Garnish with parsley if desired.
Notes
You can also add carrots, peas, or mushrooms for extra flavor. For a creamier sauce, stir in 1/2 cup sour cream or cream cheese at the end.
